- While the risotto is cooking, sauté the mushrooms in a separate pan until they’re browned and set them aside.
- Once the rice is al dente and creamy, lower the heat and stir in the Parmesan cheese and butter until melted and incorporated.
- Add the cooked chicken and mushrooms to the risotto, stir to combine everything evenly.
- Adjust seasoning with more salt and pepper if needed.
