Stir-fries are a staple in Chinese cuisine, known for their speedy cooking times and vibrant flavors. The beef and broccoli stir-fry is no exception, offering a delicious blend of tender beef slices and crunchy broccoli in a savory sauce. This dish is perfect for a quick weeknight dinner or as a satisfying meal any time of the day.

Ingredients:

  • 1 lb beef sirloin or flank steak, thinly sliced against the grain
  • 2 cups broccoli florets
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • For the marinade:
  • 2 teaspoons soy sauce
  • 1 teaspoon cornstarch
  • For the stir-fry sauce:
  • 1/4 cup beef broth or water
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons sesame oil
  • 1 teaspoon cornstarch

Instructions:

  1. Begin by marinating the beef: In a bowl, whisk together the soy sauce and cornstarch. Add the sliced beef and toss to coat evenly. Let it sit for at least 15 minutes.
  2. Prepare the stir-fry sauce: In another bowl, combine beef broth, oyster sauce, soy sauce, brown sugar, sesame oil, and cornstarch. Stir until the cornstarch is dissolved, and set aside.
  3. Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat. Add the broccoli florets and stir-fry for about 3 minutes, until they are bright green and tender-crisp. Remove from the pan and set aside.
  4. In the same pan, add the remaining tablespoon of oil. Add the marinated beef and spread it out in the pan. Let it sear undisturbed for about 1 minute, then stir-fry for another 2 minutes or until it’s browned and almost cooked through. Remove the beef and set aside with the broccoli.
  5. In the same pan, add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  6. Return the beef and broccoli to the pan. Pour the stir-fry sauce over the top and quickly toss together. Continue to cook for another 2 minutes, as the sauce thickens and coats the beef and broccoli.
  7. Remove from heat and serve immediately, with rice or noodles if desired.
