Delightful Tofu Stir-Fry Recipe

Ingredients:
- 1 block (14 oz) firm tofu, drained and pressed

- 1 small onion, sliced
- 2 cloves garlic, minced

- 1 tablespoon brown sugar

Instructions:
- Cut tofu into bite-sized cubes. In a large pan over medium-high heat, warm 1 tablespoon of vegetable oil. Add tofu cubes and a pinch of salt, and fry until golden brown on all sides. Remove tofu from pan and set aside.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, brown sugar, and red pepper flakes if using. In another small bowl, dissolve cornstarch in water to make a slurry. Set aside.
- Using the same pan, heat the remaining vegetable oil over medium-high heat. Add the broccoli, bell peppers, carrot, and onion, and stir-fry for about 4-5 minutes, or until vegetables are tender-crisp.
- Add the garlic and ginger to the pan with the vegetables and fry for an additional minute, stirring frequently to prevent burning.
- Return the tofu to the pan with the vegetables. Pour the soy sauce mixture over the top and stir to combine. Allow to cook for 1-2 minutes so the tofu absorbs the flavors.
- Stir the cornstarch slurry once more and then pour it into the pan. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
