Ingredients:
- 2 medium zucchinis, spiralized
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil, divided
- 1 tsp garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup crumbled feta cheese
- 1 tbsp fresh lemon juice
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions:
- Using a spiralizer, turn zucchinis into zoodles and set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, and oregano. Add to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté garlic until fragrant, about 1 minute.
- Add the cherry tomatoes and cook for another 2 minutes or until they start to soften.
- Stir in the spinach and cook until it begins to wilt.
- Add the cooked chicken back to the skillet along with the zoodles. Toss everything together and cook for 2-3 minutes, until zoodles are tender but still al dente.
- Remove from heat, and drizzle with fresh lemon juice, tossing to combine.
- Garnish with crumbled feta cheese and Kalamata olives before serving.
