Greek Chicken and Spinach Zoodle Casserole

Ingredients:

  • 2 tablespoons olive oil, divided
  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1 teaspoon dried oregano

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 medium zucchini, spiralized
  • 2 cups fresh spinach, roughly chopped

  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, zest and juice

Instructions:

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken with oregano, garlic powder, onion powder, salt, and pepper. Add the chicken to the skillet and cook until it’s no longer pink inside and slightly golden on the outside. Remove the chicken and set aside.
