Beef and Mushroom Stuffed Zucchini

Instructions

  2. Wash the zucchinis and cut them in half lengthwise. Scoop out the flesh to create a boat, leaving about 1/4 inch of zucchini around the skin.
  3. Chop the scooped-out zucchini flesh and set aside.
  4. Heat the olive oil in a large skillet over medium heat. Add the chopped onions and garlic, and sauté until they become translucent.
