Tomato Basil Bruschetta

Ingredients:

  • 6 ripe Roma tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and freshly ground black pepper to taste
  • 1 baguette French bread, sliced into 1/2-inch thick rounds
  • 1/4 cup grated Parmesan or Romano cheese (optional)
  • Additional basil leaves for garnish (optional)

Instructions:

  1. Preheat your oven to 450°F (230°C). Place the sliced baguette bread on a baking sheet and toast in the oven for about 5 minutes, or until the edges are golden brown and crisp. Remove from the oven and let cool slightly.
  2. In a mixing bowl, combine diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Gently toss to combine all the ingredients.
  3. If using, rub each slice of toasted bread with a garlic clove for added flavor.
  4. Spoon a generous amount of the tomato mixture onto each slice of toasted baguette. If desired, sprinkle with grated cheese.
  5. Place the topped slices back onto the baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly (if using cheese).
  6. Transfer the bruschetta to a serving platter, garnish with additional basil leaves, and serve immediately.

Notes:

For the best flavor, use fresh ingredients and let the tomato mixture sit for about 10 minutes before topping the bread to allow the flavors to meld. Bruschetta can be served with or without cheese, according to your personal preference.
