Ingredients:
- 4 large bell peppers, any color
- 1 lb ground beef
- 1 cup spinach, chopped
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 2 tablespoons olive oil
- Sour cream or Greek yogurt for serving (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Blanch the peppers in boiling water for 5 minutes, then drain and set aside on a paper towel.
- In a large skillet over medium heat, heat the olive oil and sauté the onions and garlic until translucent.
- Add the ground beef, breaking it apart with a spatula, and cook until browned.
- Mix in the chopped spinach and cook until wilted, about 2 minutes.
- Add the cooked rice, diced tomatoes, salt, pepper, oregano, and paprika, stirring to combine everything evenly.
- Stuff each bell pepper with the beef and spinach mixture, packing it tightly.
- Place the stuffed peppers in a baking dish, sprinkle the tops with shredded cheese, and cover with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
- Let the peppers rest for a few minutes before serving with a dollop of sour cream or Greek yogurt, if desired.
These stuffed bell peppers are not only filling but are also perfect for customizing to your taste. Whether you choose red, yellow, green, or a mix of peppers, each one brings a different sweetness and flavor to the dish. Feel free to substitute the ground beef with ground turkey or chicken for a leaner option, or add other vegetables like mushrooms or carrots to the filling.
