Ingredients:

  • 1 pound cooked shrimp, peeled and deveined
  • 2 avocados, diced
  • 1/4 cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the shrimp, avocado, red onion, cherry tomatoes, cucumber, and cilantro.
  2. In a small bowl, whisk together the lime juice, extra-virgin olive oil, salt, and pepper.
  3. Pour the dressing over the shrimp and avocado mixture and gently toss to coat.
