Hearty Chicken and Rice Casserole

  • 1 tablespoon olive oil
  • 4 boneless, skinless chicken breasts, diced
  • Salt and pepper, to taste
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup water
  • 1/2 cup sour cream
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • Chopped fresh parsley, for garnish (optional)


  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Season the diced chicken with salt and pepper, then add to the skillet. Cook until the chicken is browned and no longer pink in the center.
  3. Add the chopped onion and minced garlic to the skillet with the chicken. Cook until the onion is translucent.
  4. Stir in the uncooked rice, cream of chicken soup, cream of mushroom soup, chicken broth, water, sour cream, paprika, garlic powder, and onion powder. Mix well until all ingredients are combined.
  5. Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the top with shredded cheddar cheese.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. Remove the foil and continue to bake for an additional 15-20 minutes, or until the rice is tender and the cheese is melted and slightly golden.
  8. Let the casserole cool for a few minutes before serving.
  9. Garnish with chopped parsley if desired.
