Hearty Beef and Guinness Stew

Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons all-purpose flour
- Salt and freshly ground black pepper to taste
- 3-4 tablespoons olive oil, divided
- 1 large onion, chopped
- 3-4 cloves garlic, minced
- 3 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 parsnip, peeled and sliced (optional)
- 1 bottle (12 oz) of Guinness stout
- 3 cups beef broth
- 2 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 1 teaspoon sugar
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 cup frozen peas, thawed
- Fresh parsley, chopped, for garnish
Instructions:
- Season the beef cubes with salt and pepper and toss them with flour until they’re well coated.
- In a large pot or Dutch oven, heat half of the olive oil over medium-high heat. Add the beef in batches and brown on all sides. Transfer the browned beef to a plate and set aside.
- Add the remaining olive oil to the pot and sauté the onion, garlic, carrots, celery, and parsnip until they’re slightly softened, about 5-7 minutes.
- Pour in the Guinness and scrape up any browned bits from the bottom of the pot. Allow the mixture to simmer for a couple of minutes to reduce slightly.
- Add the beef back to the pot along with the beef broth. Stir in the tomato paste, Worcestershire sauce, sugar, dried thyme, and bay leaves. Bring to a simmer.
- Reduce the heat to low and cover the pot with a lid. Let the stew cook for about 1 1/2 to 2 hours or until the beef is very tender.
- About 10 minutes before serving, add the peas and remove the bay leaves. Adjust the seasoning with more salt and pepper if necessary.
- Garnish with fresh parsley and serve hot with crusty bread or over mashed potatoes for a complete meal.
