  • 1 cup orzo pasta
  • 2 cups chicken breast, cooked and diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

For the dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper, to taste


  1. Bring a large pot of salted water to a boil and cook orzo according to package instructions until al dente. Then drain and rinse under cold water to stop the cooking process. Set aside.
