Ingredients:
- 8 oz pasta of your choice
- 1 lb large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- 1/2 cup chicken or vegetable broth
- Juice of 1 lemon
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions:
- Cook the pasta according to package instructions in a large pot of boiling salted water until al dente. Drain and set aside, reserving some pasta water.
- While the pasta is cooking, heat a large skillet over medium heat. Add 2 tablespoons of butter and allow it to melt.
- Add the minced garlic and red pepper flakes to the skillet, and sauté for 30 seconds or until aromatic.
- Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper, and cook for 1-2 minutes on each side, or until the shrimp turn pink and are just cooked through. Remove shrimp from the skillet and set aside.
- In the same skillet, add the chicken or vegetable broth, lemon juice, and Italian seasoning. Bring to a simmer and let the sauce reduce for about 2 minutes.
- Return the cooked shrimp back to the skillet with the sauce and add the remaining tablespoon of butter. Stir until the butter is melted and the shrimp are well coated.
- Toss the cooked pasta with the garlic butter shrimp mixture. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
- Sprinkle with grated Parmesan cheese and chopped parsley, and toss everything together until the pasta is evenly coated with the sauce.
- Taste and adjust seasoning if necessary. Serve immediately while hot.
