This dish combines the fresh flavors of a classic Margherita with the health benefits of zucchini noodles, or ‘zoodles.’ It’s perfect for a quick lunch, dinner, or even a vibrant addition to your meal prep lineup. Ready in just minutes, it’s packed with fresh tomatoes, aromatic basil, and creamy mozzarella, all tied together with a drizzle of olive oil and balsamic glaze.

Ingredients:

  • 2 medium zucchinis, spiralized into zoodles
  • 1 tablespoon extra-virgin olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh mozzarella balls (ciliegine), halved
  • 1/4 cup fresh basil leaves, torn
  • Salt and pepper, to taste
