  • For the Chicken Marinade:
    • 1 pound boneless, skinless chicken thighs or breasts

    • 4-6 pita breads
    • 1/2 red onion, thinly sliced
    • 2 tomatoes, sliced or chopped
    • 1/2 cucumber, sliced
    • Lettuce or fresh greens
    • Feta cheese, crumbled (optional)


  1. Start by preparing the marinade. In a large bowl, combine olive oil, Greek yogurt, minced garlic, red wine vinegar, lemon juice, dried oregano, paprika, salt, and pepper. Mix well.
  2. Trim any excess fat from the chicken and cut into strips or bite-sized pieces. Add the chicken to the marinade and toss to ensure each piece is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Next, prepare the tzatziki sauce. In a medium bowl, mix the Greek yogurt, grated and drained cucumber, olive oil, chopped dill, minced garlic, and season with salt, pepper, and lemon juice to taste. Refrigerate until ready to serve.
