Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 large romaine lettuce heart, chopped
  • 1/2 cup shredded Parmesan cheese
  • 1 cup croutons
  • For the Caesar dressing:
  • 2 cloves garlic, minced
  • 1 teaspoon anchovy paste (optional)
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup mayonnaise
  • 1/3 cup grated Parmesan cheese

Instructions:

  1. Prepare the chicken: Season the chicken breasts with salt and pepper. Heat 2 tablespoons of olive oil in a grill pan over medium-high heat. Add the chicken and cook for about 6-7 minutes per side or until fully cooked through. Let the chicken rest for a few minutes, then slice it into thin strips.
  2.
