Ingredients:

  • 2 cups cooked rice
  • 2 cups cooked, shredded chicken
  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (4 oz) diced green chilies
  • 1 cup salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder

  • 2 cups shredded Mexican blend cheese
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream for serving

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine cooked rice, shredded chicken, black beans, corn, green chilies, salsa, ground cumin, chili powder, garlic powder, salt, and pepper. Mix well to ensure the spices are evenly distributed.
  3. Spread half of the rice mixture in the bottom of a greased 9×13 inch baking dish.
  4. Sprinkle one cup of shredded cheese over the rice mixture.
  5. Layer the remaining rice mixture on top of the cheese.
  6. Finish with the remaining cup of cheese, spreading it evenly over the top.
  7. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  8. Remove the casserole from the oven and let it sit for 5 minutes before serving.
  9. Garnish with fresh cilantro, and serve with a dollop of sour cream and guacamole on the side.
