Classic Shrimp Scampi Pasta

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/4 cup chopped parsley
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese for serving

Instructions:

  1. Start by cooking the pasta according to package instructions in a large pot of boiling salted water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, melt 1 tablespoon of butter with the olive oil over medium heat. Add the shrimp, seasoning with salt and pepper, and cook until they turn pink and opaque, about 2 minutes per side. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add the remaining butter, garlic, and red pepper flakes. Cook until the garlic is fragrant, about 1 minute. Pour in the white wine or chicken broth, increase heat to bring to a simmer, and let it reduce by half, which typically takes about 3-4 minutes.
  4. Return the shrimp to the skillet along with the lemon juice, lemon zest, and cooked pasta. Toss to combine and cook for an additional minute to heat through, adding the reserved pasta water as needed to loosen the sauce.
  5. Remove from heat, stir in the chopped parsley, and adjust seasoning with additional salt and pepper if necessary.
  6. Serve the shrimp scampi immediately, garnished with grated Parmesan cheese and extra parsley if desired.

Notes:

For those who prefer not to use alcohol, chicken or vegetable broth makes a great substitute for white wine. Also, ensure not to overcook the shrimp to keep them succulent and tender. This dish is best enjoyed fresh, but leftovers can be stored in an airtight container and reheated gently.
