Refreshing Shrimp and Quinoa Salad

Instructions:
- In a medium saucepan, bring the 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed. Fluff with a fork and let cool.
- While the quinoa is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper. Cook shrimp for 2-3 minutes on each side or until they turn pink and are cooked through. Remove from heat and let cool.
- In a large bowl, combine the cooked quinoa, shrimp, cucumber, bell pepper, red onion, and cherry tomatoes.
- To make the dressing, whisk together lemon juice, extra-virgin olive oil, minced garlic, Dijon mustard, salt, and pepper in a small bowl until well combined.
- Pour the dressing over the quinoa and shrimp mixture and toss until everything is well coated. Adjust the seasoning to your taste.
