Ingredients:
- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese

- Salt and pepper to taste

Instructions:
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside of each half with olive oil and season with salt and pepper.
- Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the oven for about 40 minutes, or until the flesh is easily pierced with a fork.
