Ingredients:
- 4 medium zucchinis
- 2 salmon fillets (about 6 ounces each)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, freshly grated
- 1/2 cup teriyaki sauce (gluten-free if required)
- 1 tablespoon sesame oil
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
Instructions:
- Wash and spiralize the zucchinis into noodles and set aside. If you don’t have a spiralizer, use a vegetable peeler to create long zucchini ribbons.
- Pat the salmon fillets dry with paper towels. In a large pan, heat the olive oil over medium-high heat and sear the salmon for 3-4 minutes on each side or until cooked to your liking. Remove from the pan and set aside.
- In the same pan, add a little more olive oil if needed and sauté garlic and ginger until fragrant.
- Add the red bell pepper and carrot to the pan and stir-fry for a couple of minutes until they start to soften.
- Pour in the teriyaki sauce and sesame oil, stirring to combine. Let the sauce simmer for a minute to combine the flavors.
- Add the zoodles to the pan, tossing to coat with the sauce, and cook for about 2-3 minutes until just tender but still crisp.
- Break the seared salmon into large flakes and gently fold them into the stir-fry, being careful not to break them up too much.
- Cook for another minute to make sure everything is heated through.
