Mediterranean Stuffed Bell Peppers

Ingredients:
- 4 large bell peppers, any color
- 1 cup cooked rice
- 1/2 pound ground beef or lamb
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes, drained
- 1/4 cup feta cheese, crumbled
- 1/4 cup black olives, sliced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper to taste
- Olive oil for cooking
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Brush the outside of the peppers with olive oil and set aside.
- In a large skillet over medium heat, add a tablespoon of olive oil. Cook the onion and garlic until softened, about 3 minutes.
- Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon. Season with salt and pepper.
- Stir in the cooked rice, diced tomatoes, feta cheese, olives, parsley, oregano, and basil. Cook for another 2-3 minutes, until everything is well combined and heated through.
- Fill each bell pepper with the meat and rice mixture, packing it lightly.
- Place the stuffed peppers in a baking dish and cover with foil. Bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the tops are slightly browned.
- Let the peppers stand for a few minutes before serving. Garnish with additional parsley and feta cheese if desired.
