Caprese Stuffed Portobello Mushrooms

Ingredients:
- 4 large portobello mushroom caps
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella cheese, cut into cubes
- Fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic glaze
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Clean the portobello mushrooms by gently wiping them with a damp paper towel. Remove the stems and scrape out the gills with a spoon. Season the inside of each mushroom with salt and pepper.
- Drizzle the mushrooms with olive oil and place them cap-side down on a baking sheet lined with parchment paper.
- Bake the mushrooms in the preheated oven for about 5 to 7 minutes, or until they start to soften and release their moisture.

- Once done, remove the mushrooms from the oven and let them cool for a couple of minutes.
- Drizzle with balsamic glaze and garnish with fresh basil before serving.
